Adventures in Cooking...Mexican Chicken

So, as I have mentioned in previous posts, I am not exactly Rachel Ray or Paula Dean, but, I made an incredible dish last night and thought I would share. And if I can make it you have to know you can! It is one of my all-time favorites. It is worth a try I promise.

What you'll need:

4 boneless skinless chicken breast
1 can enchilada sauce
1 can cream of mushroom soup
1 bag of Doritos
8oz of extra sharp grated cheese

How it's done:

Boil your four chicken breast until throughly cooked. Keep the chicken broth and cut the chicken breasts into bitesize pieces. In a separate bowl, mix the can of enchilada sauce, cream of mushroom soup, and the chicken pieces. Use a  9x13 sprayed casserole dish and crumble a layer of Doritos on the bottom. Pour the chicken mix over the Doritos.. And finally pour about 8oz of the chicken broth over it all to keep the chicken moist. Bake it at 350 for 25 min. Take it out of the oven and add another layer of Doritos and top it off with the 8oz of grated cheese. Bake for another 5 minutes and viola! MEXICAN CHICKEN

Introducing....

Bella Grace
"Gracie"

You may have read my HF4F post yesterday where I told you that I am the mommy of a new puppy name Gracie. She is a 12 week old shih tzu. She is doing so well adjusting to her new home.
She even met my parents dog, Pal, and he was much more intimidated by this bouncy little fur ball than she was of him!

When I went to look at puppies on Thursday there were several and Gracie was the first one I picked up and started petting. When I put her down she crawled up in my lap and never left. Even as I was picking up the other puppies she just sat in my lap wagging her tail. She stole my heart even before I brought her home. But she is now oh so spoiled and follows me around everywhere. I love it!

I think it is safe to say I am completely attached and in love! I am sure you will be seeing a lot more of Bella Grace on My Life in High Heels!

Oh and look what I made for her...
 I will do a how-to blog on that soon....it is so easy promise!

High Five for Friday

As most Fridays, I am linking up with Lauren over at From My Grey Desk for High Five for Friday.

Photobucket

It is crazy how much can change in a week. Last week was a very challenging one with Mom's injuries and her being in the hospital. And in all honesty it was tough coming up with my HFFF, but here we are just a week later and I think I could post way more than 5 highs for this week.

So here it goes: (AHHHH I don't know what to start with....decisions decisions)

ONE: I went to the Lady Antebellum concert last Sunday night with some friends and had an absolute BLAST. It isn't summer time without country music.

TWO: My student's last day was Tuesday and TODAY is my last day of work until August 15! Oh the perks of being a teacher....but lets be honest, as any teacher can vouch,  I will be working on school stuff all summer.
Since the students got out on Tuesday, the past few days I have been working on my room and one of my favorite parts of teaching is organizing, planning, and getting creative with my room. It is just fun! I made this bulletin board for the student's good work. I love love love it.

THREE: I got a surprise graduation gift in the mail from my sweet sweet (and GORGEOUS) cousin, Lacy.

FOUR: I got to celebrate the end of school with the amazing chicks, at Sweet Frog of course.

FIVE: And now my most exciting new.......

I'M GOING TO BE A MOMMY
to my new puppy. I bring her home tomorrow and I am already in love.
So I have been busy getting the house ready.
her food and water dish
her bed and of corse a high heel chew toy

Check back this weekend to meet my new love and find out her name.
Oh if you could only see how giddy I am!

Happy Memorial Day Weekend!

I Went, I Saw...and I am more in Love than EVER

As you may have seen in my High Five For Friday post, Sunday I went to a Lady Antebellum concert. Lady A is my favorite band and they didn't disappoint! Three of my friends and I drove up to Columbia , MD (like an hour and a half away) to see the concert. We had lawn seats, which even though you are not super close to the stage, or in our case not even visible, I think they are the best seats. I have always had the most fun in the lawn seats because you are just able to spread your blanket out and relax and not be on top of people. Thompson Square and Darius Rucker opened for them.  Darius Rucker even played some Hoodie songs :) LadyA opened up with the song "We Owned the Night"  and finished with "Need You Now." I forgot how many singles they have already had because they couldn't even play them all in one set. But, they played a great concert and like I said in my posts' title I love them even more now! Concerts have a way of doing that...making you love your favorite bands that much more. There were over 15,000 people there. It was crazy. Here are a few pictures from the night...

Nothing beats summer time, country music, and amazing friends!

Sunday Seven

Sorry, I didn't post my Sunday Seven last Sunday, but I decided to just post the Mother's Day Post. I was obviously with my momma in the hospital for Mother's Day and I am sure you understand that that is more important :) Just gave me an extra week to search for this post. And trust me, sitting with momma in the hospital gave me plenty of time to pin :)

Without further ado here they are....

{Pinned Here}
I think this is a precious sign, especially with all the friends I have getting married, baby showers probably won't be far behind!

{Pinned Here}
It's a tutorial on how to make wrapping paper bows...a great way to use all those wrapping paper scraps!

{Pinned Here}
Another great item from Etsy especially since I am getting ready to get my own puppy.

{Pinned Here}
A cakesickle! Someone should probably try and make these....and I will be your guinea pig! You know just to make sure no one eats any poorly made cakesickles :)

 {Pinned Here}
Hey, a girl can dream right?

{Pinned Here}
This would be like the perfect date night

{Pinned Here}
I just love this, so true and challenging

!!I'm doing a BONUS couple of pins because I missed last week!!

Redeeming Love

I found this on youTube today. I was asked to be in a commercial last summer for the re-release of Redeeming Love by Francine River. I had forgotten about it until I heard that my aunt was reading the book and loving it. So here is the commercial.

High Five for Friday

It's finally Friday! Shoo, this week has been a long one. I felt like it should have been Friday on Tuesday!

As I mentioned in my last post my mom was in a pretty bad accident last Thursday. She had ordered my dad a large gun safe for their 28 wedding anniversary which was delivered on that day. The delivery man could not get the safe up the front step of the porch so my mom offered to help. My mom attempted to hold the dolly while she stood on the porch while the the delivery man lifted from the bottom of the step with a lot of strength and the 500lb safe ended up falling on my mom. She was rushed to the hospital while I met them there. Thank the Lord she wasn't paralyzed or worse killed. She did end up with a broken back, a separated tibia and fibia, a dislocated foot and a cracked foot. ::Poor Momma:: She was in the hospital for 6 days, but is finally home and doing remarkably well. She is still getting use to how to operate with limited mobility but doing amazing! And has had a GREAT positive attitude through the whole thing!

SO...

ONE My momma came home from the hospital on Tuesday!

TWO I graduated from WVU on Saturday with my Master's Degree :)

THREE I found a pair of cute jean shorts that don't show my booty!! Annnnnd a cute pair of sandals at Target for $15

FOUR I'm having a game night with my friends tonight. Game nights are one of my favorite things and it couldn't come at a more perfect time.

FIVE I am going to see my FAVORITE band in concert Sunday...Lady Antebellum YaY YaYYaY

OHHHHH I love love love them! Is it Sunday night yet?

Happy Friday! Enjoy your weekend and don't take a single moment for granted.

Happy Mother's Day

Happy Mother's Day to all of the ah-mazing mommas out there. I hope you enjoy your day and are dotted over and feel overwhelmingly appreciated, because you so are.

 To My Momma:

          You are every word that has ever been written in any Mother's Day Card. You are my hero, my best friend, my mentor, and the woman I aspire to be more like. Since the day I was born you have given me the example of what it means to be a Godly woman. You serve God and our family faithfully everyday with every breathe, and there has NEVER been a moment in my life that I have ever had to wonder if you love me. If every mother loved the way you love, served the way you serve, and commited to their children and family the way you have done continuously the world would look so much different. Thank you for the constant seeds of faith, love, generosity, selflessness, and patience you have sown into my life. I am forever grateful! I love you more!
                                                                                                                            Amber

Dear Mommy,

        I am your little flower mommy
Please help me grow and bloom:
Take the weeds but leave the roots
And give me lots of room.
Mommy, you are my gardener,
My sunshine and my rain.
Too much will make me wither.
With enough, I'll bloom again.
I am your little flower, Mommy.
I'm different from the rest:
Don't pick me Mommy,
 just help me grow
To be my very best.

Love,
Bailee

 I didn't realize how much I valued my mom (Debbie) until I had kids of my own. I believe I took advantage of her growing up and didn’t use her knowledge and advice like I should (as would most teenagers). I am fortunate to have my mother as a best friend, the person I look up to the most. She is always there for me and my family with any request I ask of her. I can only hope that I am as good as a mother to my daughter as she is to me.
